Almond Truffles Recipe.

As you do the sweets, you will have sure that they are healthier. Therefore, it is worth taking 15 minutes.
I found a recipe on the blog here, but there is also a variety of healthy and delicious recipes. I changed the recipe a little to the ingredients that I had. Most important are the dates, and the rest ... it's what we like {almonds, walnuts, coconut ...}.


ingredients 
125 g of crushed almonds
100 g of organic dates {soak them in water until they are soft enough}
1/4 cup of chocolate powder or cocoa powder
pinch of salt
1 tsp gingerbread spice or cinnamon
agave syrup if you like very sweet




Instructions
Combine dates and crushed amonds {if it is too dry add coconut oil or water which soaked up dates}. Add remaining ingredients except gingerbread spice and process until mixture is sticky to the touch and able to easily roll into balls {leave a little chocolate powder}. Mix chocolate powder and spice to gingerbread, and put into a bowl,  and roll truffles into chocolate powder. 
Enjoy!



How easy was that? These taste absolutely delicious!

Chocolate - Avocado Mousse.


When I found this recipe in my blogging friend - Ania,  I thought “ya right", but was curious, so I gave it a try!
It looks so creamy and tastes great.
I love this mousse!


Ingredients {for one person}

1 avocado
1 banana
6  tbsp chocolate
1 tbsp coconut oil

Directions
Put all the ingredients in blender or food processor + blend until smooth. 
 enjoy!

Sweet & Savoury Muffins recipes.

I was inspired by a recipe from The Baby Led-Weaning cookbook.
I've simplified my recipe.

Ingredients for 8 muffins:
A little oil or margarine for frying and grease the molds
1 cup gluten-free flour
1 egg
100 ml of water
1/2 cup dried fruits and nuts
6 tablespoons olive oil
5 teaspoon sugar 
1 teaspoon baking powder

Directions
Preheat oven to 175 degrees C (350 degrees F). Lightly grease 8 cup muffin cups.
Mix the flour, baking powder, sugar together in a mixing bowl.
Stir the olive oil, egg, water, dried fruits and nuts together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture to form a batter.
Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes.

1 small red onion (chopped)
1 cup gluten-free flour
1 egg
100 ml of water
3/4 cup grated cheese
3/4 cup thawed spinach
6 tablespoons olive oil
1 teaspoon sugar 
1 teaspoon baking powder
pepper and salt to taste

Directions
Preheat oven to 175 degrees C (350 degrees F). Lightly grease 8 cup muffin cups.
Mix the flour, baking powder, 
and salt, pepper together in a mixing bowl.
Stir the olive oil, egg, water, spinach with onion {Smothered onion with spinach}, and cheese together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture to form a batter. .
Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes.


That I taste the homemade sambal.

Who does not like sweets? A birthday cake.

Finally the main thing - a birthday cake and other sweets.
It was my first birthday cake for my son's first birthday. It's a nice coincidence. I chose simple recipe because I knew that a lot of time I spent on decorating cake.
It's a birthday cake gluten-free & dairy-free.


 I inspired by a recipe for a cake that I found here.
Ingredients
5 eggs,
1 cup (170 g) icing sugar, 
3 cup (500 g) potato flour or curn flour (I didn't use),
200 g margarine for baking (dairy-free)
1 tablespoons baking powder
vanilla extract






1. Prepare the cake form.

2. The eggs mix  an electric mixer on a medium speed for 2-3 minutes until light and fluffy. Next add the sugar one tablespoon at a time, beating well after each one.

3. Mix together the flour and baking powder in a bown and sift. Then add the egg and mix until just combined.
4. Melt margarine in a small saucepan, pour the boiling it to the mixture and mix just until combine. 
5. Bake for the first 30 minutes at 160ºC and next 170ºC for about 20-30 minutes. 

Enjoy!





I decorated the cake with icing and food coloring.

I made cookies using the same recipe but I used a gluten-free flour for cookies. They were a little bit harder.
