I was inspired by a recipe from The Baby Led-Weaning cookbook.
Ingredients for 8 muffins:
A little oil or margarine for frying and grease the molds
1 cup gluten-free flour
1 egg
100 ml of water
1/2 cup dried fruits and nuts
6 tablespoons olive oil
5 teaspoon sugar
1 teaspoon baking powder
Directions
Preheat oven to 175 degrees C (350 degrees F). Lightly grease 8 cup muffin cups.
Mix the flour, baking powder, sugar together in a mixing bowl.
Stir the olive oil, egg, water, dried fruits and nuts together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture to form a batter.
Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes.

3/4 cup grated cheese
3/4 cup thawed spinach
6 tablespoons olive oil
1 teaspoon sugar
1 teaspoon baking powder
pepper and salt to taste
Directions
Preheat oven to 175 degrees C (350 degrees F). Lightly grease 8 cup muffin cups.
Mix the flour, baking powder,
and salt, pepper together in a mixing bowl.
Stir the olive oil, egg, water, spinach with onion {Smothered onion with spinach}, and cheese together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture to form a batter. .
Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes.
That I taste the homemade sambal.
