Tart with rhubarb and strawberries.



 
I refresh another old post. I'm pretty busy, so often I reach for the old posts, I hope that you like it.
We started the season for rhubarb, so...

What do I associate summer with? Summer reminds me of all sorts of fruit cakes. Last week, the first time I baked tart with rhubarb and strawberries, and I had "fleshback" I felt the hot summer air on my face, the smell of tarts with rhubarb baked by my mum on Sundays and I heard my and my sis complaint "again with rhubarb".  Today I would have died for this flavor. Again, I bought rhubarb and strawberries, I'll bake another tart, maybe I will call the summer.

The recipe for a simple tart (for the cake tin about 24 cm)

  • 125 g butter or other fat
  • 250 g flour
  • about 3 tablespoons cold water
  • 50 g sugar - optimally

Fruits:

  • 2 large rhubarb
  • 150-200 g strawberries
  • powdered sugar

Pour flour into a bowl, add the butter in small pieces, then rub the butter into the flour until combined. . Then, add 3 tablespoons of cold water and knead the dough with your fingers until a smooth dough rise. Gently roll it out and move on the plate. Make some holes in the dough with a fork, then cover with baking paper and covered with peas or rice, then bake in the oven for about 20 minutes. Then, cut the rhubarb into cubes and strawberry slices. Finally, place the fruit on the dough and sprinkle with powdered sugar. Bake for about 20 - 25 minutes. I bake at 170-180 degrees.
